White peeled dry potato (tunta)

Tunta is a  variety of sun-dried potato also known as white chuño due to its white-grey colour. As opposes to its black variety it’s peeled, frozen, and dried in the altitude of the Andes mountains.

The potato is commonly consumed within South American countries such as Bolivia, Chile and Peru.

In order to cook, it must first be correctly rehydrated then prepared as desired. Most commonly it is added to soups, broths and gravies but can be used as an alternative to flour.

Once transformed into a flour it can be used in many dishes like dumplings, cookies, and other snacks.

Alternatively, it can be used in similar ways to regular potatoes which includes using it as a side with meat dishes or in sauces.
