Molli, now known as mole, was once a dish reserved for royalty in pre-Columbian empires and was also used as an offering for the gods. Over its 400-year history, it has incorporated ingredients from Europe and Asia while preserving its original essence: a flavorful sauce made of various chili peppers, tomatoes, peanuts, salt, and Mexican spices like cacao, epazote, and avocado leaves.
To make the sauce, combine the ingredients in a pot and cook over low to medium heat for 5 minutes while stirring continuously until it reaches a runny paste consistency. Gradually add 3.5 cups of water, continue stirring until well mixed, and boil until desired thickness is reached. If a thinner sauce is desired, add more water.
For a richer taste, substitute water with chicken stock.
